Ingredients Needed:
- 1 jar of sun-dried tomatoes in oil
- 1 cup of parsley leaves
- 3 garlic cloves
- salt and pepper
- cup of grated Parmesan
- 12 oz of Penne Pasta
Cook the pasta in the pasta pot until desired doeweyneness. Meanwhile blend the sun-dried dried tomatoes and the oil, salt and pepper to taste in a food processor and blend until the tomatoes are finely chopped. Transfer the tomato mixture to a large bowl. Stir in the Parmesan. Add the pasta to the pesto and toss to coat . Season with salt and pepper and serve. The heat needs to be turned down right away and a lid put on the pot to trap the steam in. A great meal to have when it is warm outside. It takes minimal time and cooking energy.
