Spicy Herbed Chicken Fingers

Ingredients Needed:

  • 1 lb chicken strips
  • 1/3 cup buttermilk
  • teaspoons Sweet smoky paprika
  • 2 teaspoons Herbs da province
  • Parmesan cheese
  • 1/3 cup Bran cereal
  • Bread crumbs

Place buttermilk in a shallow pan. Mix the paprika, spices, cheese, bran cereal and bread crumbs in an additional shallow pan. Dip the chicken strips first in the buttermilk and then the crumb mixture and place on baking sheet. Depending on the size of the strips bake in 350 degree oven for 10-15 minutes.
Chicken strips will be crunchy and golden red brown.

Chili Sweet Potato Fries

Ingredients Needed:

  • 2 Sweet Potatoes
  • Soy oil or olive oil
  • Seasoning Salt
  • Chili Pepper

Scrub and slice sweet potatoes into strips resembling fry like shapes. Lightly drizzle over oil onto potatoes. Mix with hands if necessary. Sprinkle with seasoning salt and then with 1 teaspoon of chili pepper. Bake in 400 degree oven for about 15-20 minutes or until fries are caramelized and crunchy.

Herb-ed Salad Dressing

Ingredients Needed:

  • 1/3 cup soy oil or olive oil
  • 2 T. Tarragon Vinegar
  • 1-2 cloves garlic
  • teaspoon dry mustard
  • 1-2 tablespoon herbs da provance
  • teaspoon dill weed

Shake up all ingredients in a jar or container and pour over bed of greens.
This is especially good as a marinade as well.
