Baked Bite Size Ham-Swiss and Cheddar Omelettes

Ingredients Needed:

  • 4 Eggs
  • Black Pepper
  • Salt to taste
  • 1/2 cup Swiss Cheese Cubes or Small Pieces
  • 1/3 cup Cheddar Cheese Cubes
  • 1 tablespoon Fresh Cut Chives
  • 1/2 cup Turkey Ham
  • 1 tablespoon of Dijon Mustard

Mix the eggs, spices and mustard together until it is well blended. Add the chopped chives. Mix the turkey, ham and cheeses together in a bowl. Add the egg mixture and ladle the mixture into mini or traditional size muffin cups. Using the ladle fill the cups to just below the top. Bake at 375 degrees for 12 minutes. Makes 10 traditional or 20-24 mini omelets.
